Helloooo!
I have been MIA from this blog for the past month… I have just been so crazy busy!! The weather has been so beautiful here in Calgary, so I have been spending most of my time outside, playing tennis, running, hiking, etc . Cooking kind of fell to the back of the list *GASP*! I know, crazy right?
Anyways, last month was my baby brother’s 9th birthday! Me, being the big sister, was dumb enough to volunteer to make his birthday cake for him. Feeling up for the challenge, I let my brother go through all the recipe blogs on my computer, and pick whatever cake he wanted to have. This “triple layer chocolate cake” was what he finally decided on.
The recipe is written by Elise from Simple Recipe. I am in the process of packing (moving back to Vancouver tomorrow), so I will just give you the link instead of posting the recipe here again. All I have so say is that this was the chocolatiest cake I have ever had in my entire life! SOOO rich! SOOO good! As you can see from the pictures, my cake decorating skills need a lot of improvement. But hey, this was my first time, so I am still mighty proud of myself =)
I also made mini cupcakes from this recipe, I gave them out a take-home treats for the kids!
Also, I didn’t have a food processor, so I made the chocolate icing by hand. It was VERY difficult! Took me probably an hour to get it to the right consistency. Very sore arms after.
